Easy Mother's Day Dinner

Hello everyone! :) For this Mother's Day my sister and I decided to cook our mom a home cooked meal. Here are some easy and delicious meals to make on a special day!



We thought of making:

1. Italian Salad with grape tomatoes, mandarin oranges, raspberries, and red wine vinaigrette (yum!) 

2. Buttermilk Squash Soup

3. Linguine Fini with caramelized onions and roasted garlic sauce topped with large seared scallops (fresh onions and roasted garlic inside) 

4. Strawberry flavored Parfait with strawberries, mango, banana, and raspberries topped with granola chunks

Here I tossed all of the ingredients together and added the Red wine vinaigrette



This salad is so tasty! The red wine vinaigrette is so perfect for this salad, the flavor is slightly sour but still has a sweet finish. The tomatoes give a good balance to the sweet fruits on top. The mandarin oranges give a lasting sweet taste to your palette and the raspberries offer a unique texture to the entire salad! :D


Here I switched the salad into a prettier crystal bowl :)


Buttermilk Squash Soup


Here my sister boiled the organic butternut squash soup and you can buy this at Trader Joe's. For those who never had butternut squash soup, it has a rich, thick, sweet and creamy flavor. Mmmm so good :)


Linguine Fini with caramelized onions and roasted garlic sauce topped with large seared scallops (fresh onions and roasted garlic inside) 



We minced the garlic


We chopped up the onions


We mixed them together on the stove



Here we cooked the Linguine Fini


Here is the caramelized onion and roasted garlic sauce


Here we put the sauce into the cooked onions and garllic


Here we mixed the linguine fini with the sauce


Mmmmm! Scrumptious! :)


Here I dried the scallops and put some salt onto the scallops


I left the top and bottom of the scallop on the stove for 1 minute and 15-30 seconds to ensure a medium rare sizzle




Voila! Bon Appetit!


Strong rich flavors and delicious scallops! :)


Strawberry flavored Parfait with strawberries, mango, banana, and raspberries topped with granola chunks   

Here we prepared the fruits for the parfait by cutting and slicing the various fruits into small pieces
 

We layered yogurt with different slices of fruit and then yogurt and then some more fruit and so forth :D






We topped off the parfait with some raspberries for a beautiful finish :)




Last but not least, right before you are going to serve your parfait (so the granola's don't get soggy) drizzle on some granola chunks 


A perfectly fresh, sweet and healthy desert to end your meal :)

Beautify Your Home With Flowers

Hello lovelies! :) Happy Belated Mother's Day! Yesterday my family and I celebrated Mother's Day at home. To decorate and complete the house's decor, I cut different colored roses from my dad's garden. I removed some excess, dying petals from the roses and put them in a vase filled with water almost to the top. In a quick and simple second, the rose petals created a serene and simply elegant feel to the house. The rose petals float to the top and if you put a small candle behind the vase, it'll look like the rose petals are glowing in the vase. :) You can put the vase filled with petals in the bathroom as well to make your bathroom look fresh and clean! Feel free to try different types of flowers or different colored petals to mix and match! :)
